French cuisine has evolved extensively over centuries. The national cuisine started forming in the Middle Ages to the influence of the work of skilled chefs and various social and political movements. Over the years the styles of French cuisine have been given different names, and have been modified by various master chefs. The national cuisine developed primarily in the city of Paris with the chefs to French royalty, but eventually it spread throughout the country and was even exported overseas. Specialty Dish: Chilled Avocado Soup with Shrimp

He hails from the beautiful historic town of Beauvais in France. He has had an illustrious career in the culinary arts having been a chef for over two decades. His scope of work has taken him to the United Kingdom, Switzerland, China, USA, Monaco and Germany.

Cooking is a lifelong passion. From early years he was exposed to fine foods at home and in restaurants where he developed the love and passion from his parents. Eric's region "La Picardie" is essentially for agriculture produce and very fine cheeses. The region's signature dish "La traditional Ficelle Picarde" is based on mushrooms, ham, cheese rolled in a pancake and gratinated in oven.
